  1. Toast 50 g of ground dried shrimp over medium heat until lightly browned.
  2. Blitz the toasted shrimp again so it comes out finer.
  3. For the cuko sauce, put 320 g palm sugar, 40 g tamarind and 600 ml water in a pot and cook until it boils.
  4. Add 1 tsp salt and 30 g blended garlic, then cook until it boils again.
  5. Strain the cuko sauce.
  6. Return the strained sauce to the heat with 10 blended bird's eye chillies and boil again.
  7. For the fish cake mixture, put 400 g prawn meat, 60 g egg white, 100 ml iced water, 40 g blended garlic, 1 tbsp salt, 1 tsp sugar and 1/2 tsp pepper into a blender.
  8. Blend until smooth.
  9. Add 200 g sago flour and the sliced spring onion.
  10. Blend again until evenly combined.
  11. Move the mixture to a larger bowl so it is easier to shape.
  12. Bring a pot of water to the boil, then turn the heat very low.
  13. Shape the mixture into balls using two spoons, until all of it is used.
  14. Turn the heat up, then drop the pempek into the boiling water.
  15. Boil until they float and are cooked through, then lift them out and drain.
  16. Once cool, the pempek can be sliced or fried straight away.
  17. Heat oil, then fry the pempek over medium heat until crusted and golden brown.
  18. Lift them out and drain.
  19. Serve the pempek with sliced cucumber, pour over the cuko sauce, and top with the toasted dried shrimp.
