  1. Prepare 750 g of peeled prawns.

  22. Put the palm sugar in a pan with the tamarind water and 200 ml of water, then cook until the sugar dissolves.
  23. While you wait, blend the garlic, chillies, and dried shrimp together with 200 ml of water.
  24. Once the sugar has dissolved, strain the syrup, then return it to the pan.
  25. Add the blended spice mixture, then cook over low heat for about 10 to 15 minutes until the spices are cooked and the raw smell of garlic and chilli is gone.
  26. Heat a wok, add enough frying oil, then fry the pempek until golden and crispy on the outside.
  27. Lift the pempek out and drain off the oil.
  28. Pour the cuko into a bowl, cut the pempek into pieces, then arrange them over the cuko with cut cucumber.
