  1. Prepare 1 kg of ground Spanish mackerel as the main ingredient.
  2. Weigh out 700 g of tapioca starch and set it aside.
  3. Pour 300 ml of water into the ground fish a little at a time, not all at once.
  4. Mix the fish and water by hand until even, then add more water bit by bit while mixing until all the water is used up.
  5. Add 2 eggs and 3 tbsp vegetable oil, then mix until everything is well combined.
  6. Add 4 tsp salt, 4 tsp sugar, and 2 tsp mushroom stock powder, then mix again until even.
  7. Once the fish mixture is no longer watery, add part of the tapioca starch.
  8. Fold it in with a simple mixing motion and do not knead it, because kneading will make the pempek hard.
  9. Add more tapioca starch and mix again, repeating until all the starch is used up.
  10. The dough will feel a little sticky to the touch, but do not add more starch or the pempek will turn hard.
  11. Prepare a small bowl with about 300 g of tapioca starch for dusting.
  12. Dust the work surface and your hands with tapioca starch, then take a little dough and shape it as you like, into long lenjer, egg pempek, or a thin skin shape.
  13. Bring a pot of water to a boil, then drop in the pempek.
  14. Cover the pot and boil until cooked through.
  15. Cooked pempek will float and grow to almost double its size, so take one out and cut it open to make sure the inside is done.
  16. For egg pempek, shape the dough into an oval.
  17. Dust your thumb with tapioca starch, then press a hole into the middle of the dough while thinning out the walls.
  18. Fill it with one egg yolk and a little of the white, but do not overfill or it will be hard to seal.
  19. Close the dough starting from the middle, then press it shut until it is completely sealed.
  20. Bring water to a boil again and boil the egg pempek until cooked and floating.
  21. For small egg pempek, beat a few eggs, take a little dough, make a hole in the middle, pour in the beaten egg, then seal it tightly and boil.
  22. Cut the cooked lenjer pempek into several pieces.
  23. Let the pempek cool down first, then fry it in hot oil until the surface is dry and crisp.
  24. Serve the pempek with cuko sauce and cucumber slices.
