  1. Cuko sauce: grind the garlic, red bird's eye chilies and red curly chilies with a little water.
  2. Cook 500 ml water with 250 g palm sugar over low heat, stirring until the palm sugar dissolves.
  3. Add the spice paste, salt, granulated sugar and tamarind, stirring until evenly combined. Adjust the salt and sugar, since palm sugar tastes different from region to region.
  4. Once boiling, keep cooking over low heat for about 15 minutes, then turn off the heat, strain the cuko and let it cool.
  5. Pempek: grind the mackerel with the garlic and half the water in a chopper or blender, then add the remaining water and blend briefly again just until combined.
  6. Transfer the ground fish to a bowl, add the salt and chicken stock powder, and stir until evenly combined - the mixture will come together and thicken slightly.
  7. Add the sago flour a little at a time, folding gently with a spatula. Do not stir too vigorously or the pempek will turn tough. The dough should stay a little soft, not dense; if it is too soft you can add a little more sago flour.
  8. Pempek kapal selam: take about 50 g of dough, roll it into an oval, poke a hole in the centre and shape it into a cup. Fill with beaten egg, not too full, then seal it and make sure there are no leaks.
  9. Boil in water that has a little cooking oil added so the pempek do not stick. Once they float, leave them in the pot for about 10 minutes so the egg inside cooks through, then lift out and drain.
  10. Pempek lenjer: take a piece of dough, roll it into a long log, then boil until it floats. Lift out and drain.
  11. Slice the pempek, then fry until golden, turning now and then. Lift out and drain.
  12. Serve the pempek doused in cuko sauce with sliced cucumber.
