  1. Blend 5 cloves garlic and 20 g green bird's-eye chilies with a little water.
  2. Cook 250 g palm sugar with 400 ml water until dissolved, then strain.
  3. Add the blended garlic and chilies, 1.5 tsp salt, 2 tbsp sugar, and 15 g tamarind, mix well, cook over very low heat for 15 minutes until fragrant.
  4. Strain the cuko sauce, then let it cool (ideally stored overnight in the fridge).
  5. Mix 150 g tapioca starch, salt, chicken bouillon powder, ground pepper, sugar, and garlic powder, stir the dry ingredients well.
  6. Put 300 g egg white and the dry ingredients into a bowl, add the instant coconut milk and water little by little, mix well, then add the scallion.
  7. Grease a pan with oil and line with baking paper, pour in the pempek batter, steam for about 20-25 minutes until cooked.
  8. Once slightly cooled, remove from the pan, cut the pempek sutra into pieces.
  9. Fry the pempek pieces over medium heat until browned, stirring occasionally for even cooking, remove and drain.
  10. Pour the cooled, thickened cuko sauce over the fried pempek, add cucumber pieces, and serve.
