Ingredients

Cuko sauce:

Steps

  1. Grease a 20 by 20 cm tin thinly with cooking oil, line it with plastic, then set it aside.
  2. Put 315 g of tapioca starch, 1 teaspoon of powdered broth, and 1 and a half teaspoons of salt into a bowl, then stir until evenly combined.
  3. Add 450 g of egg whites, 250 ml of medium-thick coconut milk, 2 tablespoons of cooking oil, 1 tablespoon of sesame oil, and 1 tablespoon of fish sauce.
  4. Stir the batter until smooth and slippery with no lumps.
  5. Add 3 stalks of finely sliced spring onion and 3 cloves of grated garlic, then stir until evenly combined.
  6. Heat the tin inside the steamer, then once the steamer is boiling pour the batter into the tin.
  7. Steam for about 30 minutes over medium-low heat.
  8. Lift the tin out of the steamer, then leave it until cool.
  9. Blend 10 red chillies, 5 cloves of garlic, and 10 bird's eye chillies with a little water.
  10. Pour the blended paste into a pot, then add 4 tablespoons of granulated sugar, 1 teaspoon of salt, 1 tablespoon of tamarind solution, 200 g of palm sugar chopped small, and 400 ml of water.
  11. Boil until it bubbles and the sugar dissolves, stirring now and then so the bottom does not catch, then turn off the heat.
  12. Once the pempek is cool, turn it out of the tin then cut it to the size you like.
  13. Heat oil in a pan, then fry the pempek over medium heat until golden brown, turning it so it cooks evenly.
  14. Lift the pempek out of the oil, drain it, then serve it with the cuko sauce.
