Steps

  1. Prepare a bowl and add 250 gr of wheat flour, 1 tsp of powdered broth, and 1 tbsp of salt, then stir until evenly combined.
  2. Add 400 ml of hot water then stir with a wooden spatula until evenly combined, since the dough is hot.
  3. Add 1 lightly beaten egg, then stir again until evenly combined.
  4. Add 4 crushed cloves of garlic and 4 tbsp of cooking oil, then stir until evenly combined.
  5. Add 400 gr of tapioca flour a little at a time while stirring until evenly combined.
  6. Knead the dough by hand until it is smooth, soft, and can be shaped.
  7. Prepare the filling of 3 lightly beaten eggs, which can also be swapped for tofu, cheese, or boiled quail eggs.
  8. Dust your hands with a little tapioca flour so the dough does not stick.
  9. Take a piece of dough the size of a ping pong ball, roll it round, make a hole in the middle with your thumb, then turn it into a cup shape while smoothing the rim so it does not crack.
  10. Pour in the egg filling only halfway, not too full, so it does not leak.
  11. Pinch the two edges together while pressing them shut, then place it on a plate dusted with tapioca flour so they do not stick to each other.
  12. Repeat until all the dough has been shaped.
  13. Any leftover dough without filling can be rolled into long shapes.
  14. Prepare a pot with 1500 ml of water, bring it to a boil, then add 2 tbsp of cooking oil so the pempek do not stick together.
  15. Once the water boils, add the shaped pempek and boil for about five minutes over medium heat until they float and are cooked through.
  16. Lift and drain the pempek, then boil the rest of the batch until finished.
  17. Heat a wok of oil, add a batch of the boiled pempek, then fry over medium heat until golden brown, turning them so they cook evenly.
  18. Lift the pempek out of the oil and drain them.
  19. For the cuko, blend 5 red chilies, 10 cloves of garlic, and 25 bird's eye chilies until smooth.
  20. Prepare a pot and add 200 gr of palm sugar, 500 ml of water, 5 tbsp of granulated sugar, 100 ml of strained tamarind water, and 1 tsp of salt.
  21. Add the blended spice paste.
  22. Boil over medium heat, stirring occasionally so the bottom does not scorch.
  23. Once it boils and the sugar has dissolved, turn off the heat and let it cool.
  24. Slice the pempek, strain the cuko if you prefer, then pour the cuko over the pempek and serve.
