  1. Prepare 300 g of white rice that was cooked the day before.
  2. Put the rice into a blender or food processor.
  3. Add 500 ml of room temperature water and 4 cloves of garlic, then blend until smooth.
  4. Heat a pot, then pour in the blended rice.
  5. Cook over medium to low heat so it does not burn easily, then add 2 tsp sugar, 2 tsp mushroom stock powder, 1 tsp ground white pepper, and 2 tsp salt.
  6. Stir until even, then cook for 1 minute.
  7. Add 170 g of all purpose flour a little at a time while stirring constantly.
  8. Once everything is combined, turn off the heat and let the dough cool down to room temperature.
  9. Heat 1500 ml of water in a pot for boiling the pempek later.
  10. Once the dough has cooled, add 2 eggs and 2 tbsp vegetable oil, then mix with a spatula or your hands.
  11. Add 300 g of tapioca starch a little at a time in 3 to 4 additions.
  12. Fold it in gently and do not knead it like bread dough, because that makes the texture hard.
  13. Prepare 4 beaten eggs for the filling.
  14. Take a little dough and shape it into an oval for the stuffed kapal selam pempek.
  15. Dust the tip of your thumb with flour, then press a hole with your thumb until it looks like a flower pot.
  16. Pour in beaten egg until it fills about half of the cavity.
  17. Seal the edges tightly so the egg does not leak out.
  18. Boil the pempek in the water that is already boiling.
  19. For the lenjer pempek, take some dough and roll it into a long round log.
  20. Cut the log into several pieces.

  22. Once cooked, turn off the heat, lift the pempek out of the hot water, then let it cool or rinse it with cold water.
  23. Heat a wok, add vegetable oil, then fry the kapal selam and lenjer pempek until golden.
  24. For the cuko, prepare 300 g of Palembang palm sugar, and you can use ordinary palm sugar if you do not have it.
  25. Also prepare 70 ml tamarind water, 1 tbsp dried shrimp soaked in hot water and drained, 15 green bird's eye chillies to taste, 5 cloves of garlic, 1/2 tsp pepper, and 1 tsp salt.
  26. Put the palm sugar into a pan with the tamarind water and 200 ml of water, then cook until the sugar dissolves completely.
  27. While you wait, blend the garlic, green bird's eye chillies, and dried shrimp together with 200 ml of water.
  28. Once the sugar has dissolved, strain the syrup, then return it to the pan.
  29. Add the blended spice mixture, then cook over low heat for about 10 to 15 minutes until the spices are cooked and the raw smell is gone.
  30. Cut the fried pempek into bite sized pieces.
  31. Serve the pempek with the cuko and cut cucumber.
