  5. Add 15 finely chopped shallots.
  6. Mix all the ingredients until evenly combined.
  7. Add 250 g of sago starch a little at a time, then mix until even and the batter is ready to use.
  8. Prepare 80 to 90 washed banana leaves cut to about 10 by 10 cm.
  9. Take one to one and a half tablespoons of the mixture and place it in the middle of a banana leaf.
  10. Wrap the mixture by rolling the banana leaf around it.
  11. Fasten both ends with a toothpick or a stapler, and trim the leaf ends with scissors if they are too long.

  13. Grill the otak otak for about 10 to 15 minutes, turning them several times so they cook evenly.
  14. For the peanut sauce, heat a wok, then add enough vegetable oil.

  20. Move the cooled ingredients into a food processor or blender, add 5 tbsp vegetable oil, then blend into a paste.
  21. Transfer the blended paste into a wok.
  22. Pour in 450 ml of water and stir until evenly combined.
  23. Add 2 tbsp tamarind water and 1 tsp salt.
  24. Add 3 tbsp palm sugar and 4 tbsp sweet soy sauce.
  25. Add 2 tbsp lime juice.
  26. Stir until even, then cook over low heat for 5 minutes while stirring until the peanut sauce is done.
  27. Serve the otak otak with the peanut sauce.
