  1. For the peanut sauce, prepare 6 large red chillies and 4 bird's eye chillies, and add more if you like it spicy.
  2. Heat a wok, add vegetable oil, then add 8 shallots, 5 candlenuts, 6 cloves of garlic, and the chillies, and saute until cooked through.
  3. Add 150 g of peanuts that have been washed and drained, then fry until cooked and crisp over low heat.
  4. Lift the peanuts out, drain them, then let them cool.
  5. Add a little water to the sauteed spices to help with blending, then blend until smooth.
  6. Transfer the blended spice paste into the wok.
  7. Blend the fried peanuts with a little water.
  8. Transfer the ground peanuts into the wok as well.
  9. Add 1 litre of water, using some of it to rinse the leftover paste out of the blender.
  10. Stir until all the seasoning is combined with the water.
  11. Add 80 g of palm sugar.
  12. Add 2 tbsp of thick tamarind water.
  13. Add 1 tsp mushroom stock powder, which you can skip, and 1 1/2 tsp salt.
  14. Add 5 kaffir lime leaves.
  15. Stir until even again, then cook over low heat for 45 minutes until the sauce thickens, then turn off the heat and set it aside.
  16. For the siu mai, heat a wok, add oil, then add 10 chopped cloves of garlic.
  17. Add 12 shallots that have been chopped or thinly sliced.
  18. Saute until everything is fragrant and lightly golden, then turn off the heat and set it aside.
  19. Grind 40 g of roasted dried shrimp, then set it aside.
  20. Blend 300 g of Spanish mackerel until completely smooth.
  21. Move the fish into a large bowl.
  22. Add 300 ml of iced water gradually, then mix until it is fully absorbed.
  23. Grind 700 g of pork, then move it into the large bowl as well.
  24. Add 2 eggs, then mix with your hands after washing them clean.
  25. Add the ground dried shrimp, 6 tbsp sesame oil, and 6 tbsp oyster sauce.
  26. Add 2 tsp salt and 2 tbsp mushroom stock powder, which you can skip.
  27. Add 3 tbsp sugar and 1 1/2 tsp white pepper, then mix everything until even.
  28. Add the shallots and garlic you sauteed earlier, then mix until even again.
  29. Add 300 g of tapioca starch gradually, then mix until even.
  30. Heat the steamer and brush it with oil so nothing sticks.
  31. Shape the siu mai.
  32. Fill the cut bitter gourd with the mixture.
  33. Fill the fried tofu with the mixture.
  34. Fill the potatoes with the mixture as well.
  35. Pour hot water over the cabbage, drain it, then roll it up with the mixture.
