  1. Prepare about 1 kg of pork tenderloin for marinating.
  2. Cut the meat lengthwise along the grain into pieces about 0.8 to 1 cm thick.
  3. For the spice paste, prepare 8 shallots and 4 cloves of garlic.
  4. Slice about 3 cm or 20 g of galangal.
  5. Slice 2 tbsp of palm sugar so it grinds more easily.
  6. Add 2 tsp ground coriander.
  7. Prepare 3 calamansi, which can be swapped for lemon if you do not have them.
  8. Pick out the seeds, then put everything into the blender.
  9. Add 4 tbsp coconut oil, which gives a fragrant and rich aroma.
  10. Add about 50 ml of water to make blending easier, then blend until smooth.
  11. Pour the spice paste over the sliced meat.
  12. Add 1 tsp salt, 1 tsp white pepper, and 6 tbsp sweet soy sauce.
  13. Mix well while massaging the meat a little so the seasoning soaks in better.
  14. Marinate for about one hour in the fridge.
  15. For the peanut sauce, heat a wok, then add enough frying oil.
  16. Add 400 g of peanuts.
  17. Add 7 shallots.
  18. Add 3 cloves of garlic.
  19. Add 4 red curly chillies.
  20. Fry until the peanuts are cooked, and do not let them burn because that makes the sauce bitter.
  21. Lift everything out and drain it in a strainer.
  22. Blend 3 tbsp of palm sugar in the blender.
  23. Add 5 tbsp tamarind water.
  24. Add 7 tbsp sweet soy sauce.
  25. Add 7 tbsp coconut oil.
  26. Add 2 tsp salt and 1 tsp pepper.
  27. Add the peanuts you fried earlier.
  28. Add water totalling 650 ml, then blend everything smooth.
  29. Pour the blended sauce into a wok and cook until it starts to thicken, being careful of the bubbles that splutter.
  30. Once it has thickened, turn off the heat.
  31. Thread the marinated meat onto skewers that have been soaked in water so they do not burn, using about three slices per skewer.
  32. For the basting sauce, take 4 tbsp of the peanut sauce you just made.
  33. Add 4 tbsp sweet soy sauce.
  34. Add 4 tbsp vegetable oil, then stir until evenly combined.
  35. Heat the grill, then brush it with oil.
  36. Grill the satay until half cooked, turning it on both sides.
  37. Lift it off briefly and brush it with the basting sauce until the whole surface is evenly coated.
  38. Grill it again until browned and the meat is cooked through.
  39. Serve the satay with the peanut sauce, a little sweet soy sauce, a squeeze of lime, and a sprinkle of fried shallots.
