  1. Toast 15 g of coriander seeds in a pan, then grind them coarsely and set aside.
  2. Blend 4 large red chillies, 3 cloves of garlic, and 5 cloves of shallot with a little vegetable oil.
  3. Thinly slice 800 g of pork, then set aside.
  4. Saute the spice paste in a pan, then add 4 bay leaves and 2 knobs of smashed galangal.
  5. Pour in 200 ml of water, then add 200 g of palm sugar, 1 tsp salt, 1 tsp white pepper, 1 tbsp chicken bouillon, and 2 tbsp tamarind water.
  6. Cover the pan and cook until the sugar dissolves and the liquid begins to reduce.
  7. Add the sliced meat along with half of the ground coriander, then cook until the liquid reduces.
  8. Arrange the meat on a baking tray and sprinkle the remaining coriander seed over the whole surface.
  9. Bake for 10 minutes at 200 degrees Celsius.
  10. Take it out of the oven, sprinkle with more coriander seed, then bake for another 10 minutes at 200 degrees Celsius.
  11. Let the jerky cool, then store it in the fridge.
  12. Before serving, fry the jerky with a little oil over low heat for a few seconds until the meat is slightly dry.
