  1. Prepare 700 g of pork collar, then trim off any tough parts.
  2. Slice the meat thinly, about one centimetre.
  3. For the braising spices, bruise 1 stalk of lemongrass, then cut it into pieces.
  4. Bruise about 2 cm of galangal.
  5. Prepare 10 shallots and 5 cloves of garlic.
  6. Pour in about 2 tbsp vegetable oil to make grinding easier, then blend the aromatics into a paste.
  7. Heat a wok, then pour in about 3 tbsp vegetable oil.
  8. Saute the spice paste until fragrant.
  9. Add 5 bay leaves and 5 kaffir lime leaves.
  10. Add the bruised lemongrass and galangal.
  11. Add the sliced meat, then stir until evenly coated.
  12. Pour in 400 ml of mature coconut water.
  13. Add 1 tbsp tamarind water.
  14. Add 1/2 tsp salt.
  15. Add 1 tsp mushroom stock powder, which is optional, and 1 tsp sugar.
  16. Add 1/2 tsp ground white pepper.
  17. Cover the wok and cook until the liquid reduces and the seasoning soaks into the meat, then turn off the heat.
  18. Gently pound the meat until it flattens out a little.
  19. Heat plenty of oil and fry the meat only briefly so it does not turn too hard.
  20. For the sambal, grind 100 g of red curly chillies.
  21. Add 4 bird's eye chillies to suit how spicy you like it.
  22. Roughly crush 15 shallots, they do not need to be smooth.
  23. Add 1 tomato that has been cut into pieces.
  24. Heat a wok, then add 3 tbsp vegetable oil.
  25. Saute the ground sambal mixture until fragrant.
  26. Add 2 tbsp thick coconut cream for richness.
  27. Add 1/2 tsp mushroom stock powder and 1/2 tsp salt.
  28. Add 1/4 tsp ground white pepper and 1 tsp sugar.
  29. Add 1 tbsp lime juice.
  30. Add the fried meat into the sambal.
  31. Stir until evenly coated, then turn off the heat and serve.
