  1. Blend the base yellow seasoning: shallots, garlic, galangal, charred turmeric, charred candlenuts, and toasted coriander, with a little cooking oil and water, until smooth.
  2. Saute the ground seasoning until fragrant, adding the bay leaves, kaffir lime leaves, and the bundled turmeric leaf.
  3. While the seasoning cooks, pound the beef until thin so it cooks quickly and stays tender.
  4. Once the seasoning is cooked, add salt and beef bouillon, pour in water, taste until slightly salty to balance the meat, then add the palm sugar and tamarind.
  5. Bring the broth to a boil, then add the beef, and cook for about 30 minutes to 1 hour until the liquid reduces by half and the seasoning has absorbed into the meat.
  6. For the sambal, cut the large red chilies, curly red chilies, bird's-eye chilies, shallots, and garlic, then coarsely chop them with a little oil.
  7. Dice the tomato, then saute the chilies and shallots until wilted, add the tomato, and cook until soft.
  8. Add the ground sambal together with the bay leaves, turmeric leaf, and kaffir lime leaves, season with salt and sugar to taste, cook until done, then taste and add a squeeze of lime if needed.
  9. Remove the tender beef and briefly fry it until browned on the outside, not too long so it does not get tough.
  10. Discard the bay leaves, turmeric leaf, and kaffir lime leaves from the sambal, then add the fried beef into the sambal and stir until coated with chili.
