  1. Thinly slice the beef along the grain.
  2. Grind the garlic, candlenuts, ginger, and coriander with a little water.
  3. Put the beef, bay leaves, lemongrass, galangal, and ground spice paste into a pot, add salt and coconut water, and cook until the meat is tender and the liquid reduces, stirring occasionally.
  4. Pound the beef with a pestle until slightly flattened.
  5. Fry the beef briefly over medium heat until lightly browned (for wet dendeng, no need to fry until dry), then remove and drain.
  6. Fry the curly green chilies, bird's-eye chilies, and shallots briefly until wilted, remove and drain, then coarsely pound them.
  7. Sauté the pounded green sambal until fragrant, add a little water, salt, beef bouillon powder, and tamarind water, and stir well.
  8. Add the fried beef, stir gently for a short time (not too long, so the green chilies don't turn dark), then remove and serve.
