  1. Cut the beef along the grain, into thin slices.
  2. Grind the garlic, candlenuts, ginger, and ground coriander.
  3. Boil the beef with the ground spice paste, salt, bay leaves, lemongrass, and galangal in water (or coconut water) until the beef is tender and the seasoning is absorbed, then drain.
  4. Pound the beef flat so it becomes more tender and the seasoning penetrates further.
  5. Fry the beef briefly (for a moist-style dendeng), or longer if you want it dry and crispy, then remove and drain.
  6. Fry the curly red chilies, bird's-eye chilies, and shallots until slightly wilted.
  7. Coarsely pound the fried sambal ingredients.
  8. Fry the pounded sambal again over low heat until fragrant.
  9. Add a little of the beef cooking broth, salt, and beef bouillon powder, stir well.
  10. Add the fried beef, stir, then add the tamarind water, stir until well combined.
  11. Taste, and once it's right, remove and serve.
