Bak Kwa, Sweet Glazed Pork Jerky

Ingredients

  1. Marinate the minced pork belly with 2 tbsp honey, 5 tbsp golden syrup, 1 tbsp oyster sauce and 1 tbsp light soy sauce.
  2. Add 1/6 tsp five spice powder, 1 tsp white pepper and half a teaspoon of salt.
  3. Add 1 tsp ground red yeast rice, half a tablespoon of rice wine and 1 tsp sesame oil, then stir until evenly combined.
  4. Cover with plastic wrap so the meat does not dry out, then chill it for at least 1 hour or overnight.
  5. Take some of the meat, put it on baking paper, cover it with another sheet, then roll it thin into a square about the size of your tray.
  6. Place the meat sheet into the tray then peel off the top sheet of baking paper.
  7. Bake at 170 degrees Celsius with top heat for about 10 minutes without preheating the oven.
  8. Take the cooked sheet out of the tray and set it aside, clean the tray and baking paper, then keep baking until all the meat is used.
  9. Any leftover meat can be rolled into balls then pressed flat into rounds to make coin shaped bak kwa.
  10. Cut each sheet of meat into four pieces using scissors.
  11. Prepare the glaze by mixing 2 tbsp golden syrup with 1 tbsp water, stirring until combined.
  12. Arrange the meat pieces on a tray lined with aluminium foil, then brush them evenly with the glaze.
  13. Bake at 220 degrees Celsius with top and bottom heat for 5 to 6 minutes.
  14. Turn them over, glaze the side that was underneath, then bake again at 220 degrees Celsius with top and bottom heat for 5 to 6 minutes, checking so they do not burn.
