  1. Cut 1 kg of pork belly combined with lean pork into small pieces.
  2. Marinate the meat with 3 tbsp thick salty soy sauce, 2 tbsp oyster sauce, and 3 tbsp sweet soy sauce.
  3. Add 1 tbsp Chinese cooking wine and 1 tsp ground white pepper, then mix until even.
  4. Marinate the meat for 1 hour or overnight in the fridge.
  5. Prepare 70 to 80 bamboo leaves, choosing the largest ones you can.
  6. Boil the leaves for about 20 minutes in water that does not need to reach a rolling boil, and weigh them down so they all stay submerged.
  7. After boiling, wash the leaves gently so they do not tear.
  8. Dry the leaves with kitchen paper or a clean cloth, then trim off the hard tip so they do not tear while wrapping.
  9. Rinse clean 8 shiitake mushrooms soaked for 3 hours, 100 g of peanuts soaked for 3 hours, and 50 g of dried shrimp soaked for 1 hour.
  10. Finely chop 8 shallots and 6 cloves of garlic.
  11. Cut the shiitake mushrooms to whatever size you like.
  12. Roughly chop the dried shrimp.
  13. Prepare 2 Chinese sausages.
  14. Soak 2 litres of glutinous rice for 1 hour, then drain off the water.
  15. Heat a wok, add 4 tbsp vegetable oil, then saute the garlic and shallots until fragrant.
  16. Add the dried shrimp and saute until the aroma comes out.
  17. Add the meat that was marinated overnight.
  18. Stir fry until the meat turns pale.
  19. Add the mushrooms and peanuts, then stir until everything is evenly combined.
  20. Add 2 tbsp oyster sauce, 3 tbsp thick salty soy sauce, 2 tbsp regular light soy sauce, and 3 tbsp sweet soy sauce.
  21. Add 1 tsp ground white pepper, 2 tsp mushroom stock powder, and 1/4 tsp five spice powder, then stir until even.
  22. Pour in 100 ml of the shiitake soaking water.
  23. Cook for about 3 minutes until the liquid reduces and a little oil comes out, then turn off the heat.
  24. Dry fry the Chinese sausage without oil because it is already fatty.
  25. In the same wok, add 2 tbsp vegetable oil.
  26. Add the glutinous rice that was soaked earlier.
  27. Add 2 tbsp thick salty soy sauce, 2 tsp mushroom stock powder, 2 tsp salt, and 100 ml of water.
  28. Stir briefly until the water has reduced.
  29. Prepare 15 to 18 salted egg yolks, and cut them in half if they are large.
  30. Hang up a length of string so it is easier to tie the parcels later.
  31. Take two bamboo leaves with the smooth side facing you, then fold them into a cone like an ice cream cone with a pointed bottom.
  32. Fill it with about 2 tbsp of glutinous rice, then press a hollow in the middle for the filling.
  33. Add the meat, mushroom, and peanut mixture, then a salted egg yolk and one or two pieces of Chinese sausage.
  34. Add a little more meat, then cover it back up with glutinous rice and press it down.
  35. Fold the leaves while pressing everything tight so the rice does not turn soggy, and wrap as tightly as you can so water cannot get in.
  36. Once the parcel is firm, tie it with string.
  37. Bring water to a boil in a large pot, then add the zongzi and make sure they are all submerged.
  38. Cover the pot and cook for 2 1/2 to 3 hours, adding hot water whenever the level drops so the zongzi stay submerged.
  39. Turn off the heat once the zongzi are cooked.
