Bakcang Fillings: Five-Spice Pork and Peanut

Steps

  1. Soak the washed peanuts in hot water for 1 hour, then keep them in the refrigerator until the next morning.
  2. Discard the soaking water, rinse the peanuts twice, then boil them in enough water in a covered pot for 15 minutes counted from the moment it boils, over medium heat.
  3. Turn off the heat without opening the lid and leave it for 1 hour until the peanuts are tender, then drain, rinse once more, and drain again.
  4. Clean the root fibres off the salted radish, slice it thinly, then cut it into matchsticks.
  5. Finely chop 6 shallots and 6 cloves of garlic, then divide the garlic into two portions.
  6. Soak the washed dried shrimp in hot water, drain, then chop coarsely.
  7. Heat a wok with enough vegetable oil, then saute the shallots, garlic, and dried shrimp until fragrant.
  8. Add the sliced salted radish and saute until its aroma comes out and it turns fairly dry.
  9. Add the peanuts, stir and cook until evenly combined, then transfer this filling to a container.
  10. Soak the washed shiitake mushrooms until swollen and soft, squeeze them dry, then cut them up and discard the stems; keep the soaking water for cooking the pork.
  11. Cut the pork belly cut into slices of your preferred thickness.
  12. Heat a wok with enough oil, add half of the chopped garlic together with the mushrooms, then saute until the mushrooms turn slightly browned without burning the garlic.
  13. Add the pork and stir until it changes colour, then add the sugar, pepper, five-spice powder, salty soy sauce, dark soy sauce, and oyster sauce, and stir until evenly combined.
  14. Pour in the mushroom soaking water, cook while stirring occasionally until the liquid reduces, add the cooking wine, turn off the heat, then stir in the sesame oil before taking it off the stove.
