  1. Prepare about 40 pandan leaves around 40 cm long and 8 to 10 cm wide.
  2. Remove the hard rib down the middle of each leaf so it can be folded, and cut off the thorns because they are sharp.
  3. Wash each leaf on both sides.
  4. Wipe the leaves dry with a clean kitchen cloth.
  5. Roll the leaves up and leave them at room temperature for about 1 to 2 days so they become more pliable and easy to shape.
  6. Wash the glutinous rice that has been soaked for three hours until clean.
  7. Put the glutinous rice into a large wok, then pour in 1.6 litres of coconut milk from one coconut, or 300 ml of coconut cream with 1.3 litres of water.
  8. Stir until the rice absorbs the coconut milk, and turn off the heat while the rice is still moist but not fully dry.
  9. Move the par cooked glutinous rice into a steamer with already boiling water.
  10. Cover the steamer, then steam for 45 minutes.
  11. Finely chop 15 shallots and 10 cloves of garlic.
  12. Heat a wok, add 4 tbsp vegetable oil, then add the garlic and shallots and saute until fragrant.
  13. Roughly chop 150 g of dried shrimp that has been soaked for one hour.
  14. Add the chopped dried shrimp into the wok, then stir fry for about 5 minutes.
  15. Add 1.5 kg of ground pork made from 500 g of skinless pork belly mixed with 1 kg of lean pork, then stir fry until it turns pale.
  16. Add 6 tbsp light soy sauce and 5 tbsp sweet soy sauce.
  17. Add 2 tsp mushroom stock powder, which you can skip, and 1 tsp ground white pepper.
  18. Add 2 tsp sugar and 1/2 tsp salt.
  19. Stir fry the meat for 5 to 10 minutes until the liquid reduces and the oil separates out.
  20. Taste it and adjust anything that is missing, and turn off the heat under the steamed rice as it is now cooked.
  21. Take one pandan leaf with the shiny side facing out, then shape it into an ice cream cone.
  22. Fill it with 1 to 2 tbsp of the steamed glutinous rice, then press a small hollow in the middle.
  23. Fill the hollow with 1 1/2 to 2 tbsp of the stir fried meat, adjusting to the size of the leaf.
  24. Cover it back up with about 1 to 1 1/2 tbsp of glutinous rice.
  25. Fold the ends of the leaf over into a pyramid shape, then tie it with string.
  26. Steam the parcels in a steamer with boiling water for 35 minutes over medium heat.
  27. Once cooked, turn off the heat and take the parcels out.
