Bakcang, Glutinous Rice Dumplings Wrapped the Way Mama Does

  1. Boil the bamboo leaves, then rinse them in clean water while scrubbing with a cloth.
  2. Rinse once more, then wipe the leaves dry.
  3. Heat a little oil, then saute 3 cloves of finely chopped garlic until golden.
  4. Add 1 kg of glutinous rice that has been soaked for 6 hours and drained, then stir until evenly mixed.
  5. Add 1 tbsp oyster sauce.
  6. Cook over very low heat, stirring continuously.
  7. Add 1 tsp salt.
  8. Add 1 tbsp sesame oil for extra fragrance.
  9. Once the rice looks dry, turn off the heat and let it cool down before wrapping.
  10. Get out the fillings prepared earlier: meat braised with shiitake, peanuts cooked with salted radish and dried shrimp, and matong.
  11. Take the bamboo leaves and stack three of them together.
  12. Arrange the stack however it sits comfortably, then trim off any excess.
  13. Fold the leaves into a cone.
  14. Fill with glutinous rice, then add meat, mushroom, peanuts and radish, and cover with more rice.
  15. Close the leaves, wind the string around once and tie, then wind around once more and tie again.
  16. Carry on until they are all wrapped; 1 kg of rice makes roughly 26 to 30 dumplings depending on size.
  17. Bring a large pot of water to the boil, then lower in the bakcang.
  18. Make sure they are submerged; add more water if they are not.
  19. Boil over high heat for 1.5 hours.
  20. After 1 hour, check the water and top it up with boiling hot water so they stay submerged; never use cold or room temperature water.
  21. After 1.5 hours, lift the bakcang out and cut the strings.
