Ingredients

Steps

  1. Wash 1 kg of kolang kaling thoroughly and press out the yellow spot in the middle or at the edge.
  2. Move the kolang kaling to a larger bowl and pour over leftover rice-washing water until they are fully submerged.
  3. Soak the kolang kaling for at least about three hours.
  4. After three hours, wash the kolang kaling at least three times until they are clean, squeaky and no longer slimy, then drain.
  5. Put water in a pot, add 5 kaffir lime leaves, cover the pot, then bring it to the boil.
  6. Once the water boils, add the drained kolang kaling.
  7. Boil over medium heat for about 20 minutes until the kolang kaling are soft.
  8. After 20 minutes, test them with a fork; once soft, turn off the heat and drain them.
  9. Prepare a pot and add the drained kolang kaling, 150 g granulated sugar, 400 ml syrup and 200 ml water.
  10. Cook over medium heat, stirring occasionally, until the liquid thickens and soaks in.
  11. Turn off the heat and leave it briefly until the steam has died down.
  12. Transfer the kolang kaling to another container, and once cool cover it and chill in the fridge for at least about five hours.
  13. Keep the sweet preserve in an airtight container in the fridge and use a clean dry spoon to serve it so it keeps for up to a month.
