Pengkang, Pontianak Grilled Sticky Rice Cones

Steps

  1. Put 500 g of white glutinous rice that has soaked for at least an hour into a wok.
  2. Add 1 tsp salt and 300 ml medium thick coconut milk.
  3. Turn on the heat then cook while stirring constantly until the coconut milk is fully absorbed by the rice.
  4. Once the coconut milk is absorbed turn off the heat, move the rice into a steamer with boiling water, then steam for 30 minutes.
  5. After 15 minutes open the steamer and stir with chopsticks so it cooks more evenly, then cover and steam another 15 minutes until done.
  6. Move the cooked rice to a wide dish and let it cool before shaping.
  7. Boil water in a large pan, lower the heat, add the banana leaves, and let them soak for about a minute until they are soft and pliable.
  8. Take the banana leaves out, drain them, then wipe them dry.
  9. Prepare a wok, add 200 g grated coconut, turn the heat to low, then toast it while stirring constantly until browned.
  10. Once browned take it off and let it cool first, then blend it until fine.
  11. Blend 30 g dried shrimp but not until fine, leaving the texture coarse.
  12. Blend 4 shallots and 2 cloves of garlic with a little oil so they blend more smoothly.
  13. Heat enough cooking oil in a wok then saute the shrimp and aromatics over medium heat until fragrant and browned.
  14. Add 1/3 tsp salt and 2 tsp sugar then stir.
  15. Once browned turn off the stove, add the toasted grated coconut, then stir until combined.
  16. Blend all the sambal ingredients until smooth, that is 15 dried chilies softened in hot water, 8 shallots, 4 cloves of garlic, 3 candlenuts and 2 tbsp dried shrimp.
  17. Heat a generous amount of cooking oil, add the blended sambal, then saute over medium heat.
  18. Add 1 tbsp palm sugar, 1 tsp mushroom bouillon and 1 tsp salt, then stir.
  19. Saute until it reaches the dark brown color you want, then take it off and transfer it to a bowl.
  20. Roll one banana leaf into a cone.
  21. Put in a little sticky rice and pack it right down so the tip of the cone is filled.
  22. Add about 2 tsp of the dried shrimp serundeng and press it down a little.
  23. Cover it again with sticky rice then pack it down again.
  24. Fold the top over, trim the excess leaf, then pin it with a toothpick or a cut satay skewer and compact the tip.
  25. Prepare a grill pan, brush it with oil, arrange the pengkang on it, then grill until browned to your liking.
  26. Serve the pengkang with the sambal.
