  1. Soak about 100 g of pork skin crackers for 30 minutes until soft.
  2. Bring 500 ml of water to a boil, then add 350 g of pork ribs into the pot.
  3. Once it has boiled briefly, lift out the bones and throw away the water.
  4. Pour 3 litres of clean water into the pot.
  5. Return the pork ribs to the pot.
  6. Add 4 tbsp of soybeans that have been soaked overnight or at least 6 hours so they cook faster, then add 3 tsp salt.
  7. Add 1 tsp ground white pepper.
  8. Add 2 tsp mushroom stock powder, which is optional.
  9. Cook for 1 hour and 30 minutes over low heat.
  10. For the rice sheets, prepare 200 g of rice flour.
  11. Add 50 g of tapioca starch.
  12. Add 1/2 tsp salt.
  13. Add 2 tbsp vegetable oil.
  14. Pour in 500 ml of water in stages, then stir until smooth.
  15. Let the batter rest for 30 minutes.
  16. Brush the base of a tray thinly with vegetable oil, then pour about 50 ml of the rice flour batter into a 22 cm tray.
  17. Put the tray into the steamer over already boiling water, cover it, then cook over medium heat for about 3 to 4 minutes until set.
  18. Prepare another tray to steam the next batch so you save time.
  19. Cut the set rice sheet down the middle, then roll it up.
  20. Brush the rice rolls with oil so they do not stick to each other.
  21. Bring about 1 litre of water to a boil in a pot.
  22. Set aside 60 ml of the rice flour batter for making the soup.
  23. Cut the rice rolls into pieces.
  24. Once the water boils, add 1 tsp salt, 1/2 tsp ground white pepper, and 1 tsp mushroom stock powder.
  25. Add the reserved rice flour batter into the boiling water.
  26. Once it boils again, add the rice rolls.
  27. Stir briefly, then turn off the heat.
  28. Discard the soaking water from the pork skin crackers, then cut the skin into pieces if they are too big.
  29. Add the soaked and cut skin into the boiling stock, then cook just until it comes to a boil without going too long.
  30. Once done, turn off the heat.
  31. To serve, take some rice rolls with their soup, then add the pork skin soup on top.
  32. Add fried garlic oil, and this oil can be made the day before so you are not rushing on the day.
