Bubur Pesawat, Pontianak Rice Porridge with Braised Pork

Steps

  1. Wash 200 g of chai kua that has been soaked until soft; rinse it repeatedly until no grit settles in the water.
  2. Squeeze out all the water.
  3. Cut away the tough stem end.
  4. Cut the chai kua into short pieces.
  5. Cut 1 kg of pork rib cartilage into pieces; not too thick so it does not take too long to cook.
  6. Cut up the pork meat as well.
  7. Marinate the meat with 3 tbsp light soy sauce and 1 tbsp dark soy sauce for a deeper coloured broth.
  8. Take a pot, add a generous amount of vegetable oil, then fry 10 cloves of garlic and 4 shiitake mushrooms until golden and fragrant.
  9. Add the chai kua and stir; add more oil if it gets too dry.
  10. Stir until the chai kua smells fragrant, then take it out and set aside.
  11. In the same pot, add 2 tbsp sugar, 1 segment of galangal, the cinnamon, 2 star anise and 5 cloves.
  12. Let the sugar melt, then stir briefly.
  13. Add the marinated meat and stir until it changes colour.
  14. Pour in 1.5 litres of water and cook until it boils.
  15. Skim off and discard the scum that rises to the surface.
  16. Add the chai kua that was fried with the garlic and mushrooms, then stir briefly.
  17. Cook until the liquid reduces, about half an hour.
  18. Pour in another 500 ml of water, stir well, then cook another half hour until reduced.
  19. Pour in the last 500 ml of water and cook another half hour until the meat is tender.
  20. For the best flavour, cover it and let it rest for at least 2 hours, or overnight.
  21. For the porridge, put 300 g rice and 2.5 litres of water in a rice cooker and select the porridge setting.
  22. Once cooked, stir it briskly straight away so the porridge comes out smooth.
  23. After the 2 hour rest, bring the braise back to a boil; the more times it is reheated, the better it tastes.
  24. Serve the porridge topped with the braised chai kua, salted egg and pickled mustard greens.
