  1. Prepare 600 g of ground pork.
  2. Add 70 g of sugar.
  3. Add 1 tbsp oyster sauce.
  4. Add 1 tsp light soy sauce.
  5. Add 2 tbsp Chinese rose wine or Shaoxing wine.
  6. Add 1/2 tsp white pepper.
  7. Add 1 tbsp red yeast rice powder.
  8. Add 1/4 tsp five spice powder.
  9. Add 1 tsp char siu sauce.
  10. Add 1 tsp sesame oil.
  11. Add 2 tbsp honey.
  12. Add 1 tsp mushroom stock powder.
  13. Mix well until the sugar dissolves and the meat turns sticky.
  14. Marinate the meat for six hours or overnight.
  15. Divide the meat mixture into three portions for three different flavours.
  16. For the spicy one, add 1 tbsp chilli powder to the first portion and mix well.
  17. For the coriander one, dry roast coriander seeds, then grind them in a mortar.
  18. Add 1 tbsp ground coriander to the second bowl and mix well.
  19. Prepare coin moulds, then fill each mould with 13 g of the meat mixture.
  20. Flatten the surface with a bottle cap.
  21. Sprinkle the matching spice powder on top so the flavours are easy to tell apart.
  22. Bake at 170 degrees for seven minutes.
  23. Do the same for the spicy and the original flavours.
  24. For the glaze, mix 2 tbsp golden syrup, which can be swapped for honey.
  25. Add 1 tbsp vegetable oil.
  26. Add 1 tbsp water, then stir until evenly combined.
  27. Heat a grill, then grill the bak kwa on both sides.
  28. Brush with the glaze you made earlier, then grill again for 3 to 5 minutes.
