  1. Prepare 300 g of pork neck or pork collar.
  2. Pound the meat with a meat tenderiser or the back of a knife.
  3. Add 1 tsp oyster sauce and 1 tsp garlic powder.
  4. Add 1 tbsp cornstarch and 1 piece of fermented red bean curd.
  5. Add 1 tbsp sesame oil.
  6. Add 1 tsp mushroom stock powder, 1/2 tsp sugar, and 1/4 tsp ground white pepper.
  7. Add 1 egg.
  8. Mix all the ingredients well, especially mashing the red bean curd so it combines properly.
  9. Cover the bowl, then marinate the meat in the fridge for at least one hour.
  10. For the dry coating, prepare 100 g of all purpose flour.
  11. Add 25 g rice flour and 25 g cornstarch.
  12. Add 1/2 tsp baking soda and 1/2 tsp salt.
  13. Add 1/2 tsp ground white pepper and 1 tsp garlic powder.
  14. Whisk the flour mixture until everything is evenly combined.
  15. Pour plenty of vegetable oil into a wok and heat it up.
  16. Coat the marinated meat in the dry flour mixture.
  17. For this recipe one layer of flour is enough for crispiness, or if you like you can do three layers with flour, then egg, then flour again.
  18. Fry the meat until it is lightly golden but not deeply coloured yet.
  19. Fry the rest of the meat in batches until it is all done.
  20. Once all the meat is fried, reheat the oil to medium to high temperature.
  21. Fry the meat again for 30 seconds to 1 minute until cooked and crispy, then serve.
