Crispy Fried and Steamed Stuffed Eggplant

  1. Put 300 g of minced pork, 150 g of coarsely chopped shrimp and 70 g of grated carrot into a mixing bowl.
  2. Add 1 tbsp of sesame oil and 2 tbsp of oyster sauce.
  3. Season with 1 tsp of pepper, 3/4 tsp of salt and half a teaspoon of mushroom bouillon.
  4. Add 1 egg and about 2 tsp of chopped garlic.
  5. Thinly slice the small scallions and add them.
  6. Mix everything until evenly combined.
  7. Add 2 tbsp of cornstarch and mix again.
  8. Prepare a bowl of cornstarch for coating the eggplant so it does not turn dark.
  9. Cut the eggplant into pieces of about 2 cm and split the middle without cutting all the way through so it can be filled.
  10. Fill each eggplant with about 1 tbsp of the mixture, adjusting to the size of the eggplant.
  11. Dust the stuffed eggplant with enough cornstarch.
  12. For the batter mix 8 tbsp of all-purpose flour with 2 tbsp of cornstarch, half a teaspoon of salt, half a teaspoon of pepper and a quarter teaspoon of baking powder.
  13. Add 1 egg and about 150 ml of water and stir until smooth, the batter should be neither too runny nor too thick.
  14. Rest the batter for about half an hour.
  15. Heat the oil until it is really hot, dip the eggplant in the batter and fry it, because if the oil is not hot the eggplant will soak up oil.
  16. Lift the eggplant out once it turns slightly pale, this is the first frying.
  17. Reheat the oil to between medium and high heat.
  18. Return the eggplant and fry both sides until golden, watching it closely because it burns easily.
  19. Lift out the fried eggplant and set it aside.
  20. For the steamed version, cut the eggplant into slices of about one and a half centimetres.
  21. Spread about 1 tbsp of the filling on top of each slice, then put them on a plate for steaming.
  22. For the sauce mix 1 tbsp of oyster sauce, 2 tbsp of soy sauce and 1 tbsp of chili oil, which you can skip if you do not like it spicy.
  23. Add 1 tbsp of rice vinegar, half a tablespoon of sugar, a quarter teaspoon of pepper, 50 ml of water and about 1 tsp of cornstarch, then stir until the sugar dissolves.
  24. Pour the sauce over the eggplant, then steam it until the eggplant is cooked.
  25. Add fried garlic oil on top so the aroma is even better.
