  1. For the filling, prepare 300 g of ground pork.
  2. Add 5 tbsp light soy sauce and 1 tbsp oyster sauce.
  3. Add 1/2 tsp white pepper and 1 tsp mushroom stock powder.
  4. Add 1 tbsp sugar, then mix all the ingredients until even.
  5. Marinate the meat for 1 hour in the fridge.
  6. Heat a wok, add enough vegetable oil, then add 3 chopped shallots.
  7. Add 3 chopped cloves of garlic and 1 chopped onion, then saute until fragrant.
  8. Add the marinated meat, then stir fry until cooked.
  9. Add 1 tsp cornstarch mixed with 1 tbsp water, stir briefly until combined, then turn off the heat.
  10. For the dough, prepare 450 g of low protein flour because it suits the soft texture of steamed buns.
  11. Add 50 g of wheat starch, which has no gluten so the buns come out whiter.
  12. Add 80 g sugar, 1 tsp double acting baking powder, and 8 g of instant yeast that is still active.
  13. Add 1/2 tsp salt, then mix the dry ingredients together first.
  14. Add about 240 to 250 ml of cold water a little at a time rather than all at once so the dough is smoother, and cold water is used so the dough does not proof too early.
  15. Knead the dough for about 10 minutes until the surface is fairly smooth.
  16. Add 80 g of shortening at this last stage, because adding it at the start makes the dough lumpy.
  17. Knead until the dough is elastic, about 20 to 30 minutes by hand or about 15 minutes with a mixer, and elastic dough shows a thin transparent film when stretched between your fingers without tearing.
  18. Divide the dough into 16 portions of roughly 54 to 55 g each.
  19. Shape each portion into a small ball.
  20. Rest the dough for about 15 minutes and cover it with a cloth so it does not dry out.
  21. Prepare the fillings, which are Chinese sausage, 4 boiled eggs or salted egg yolks, and the soy braised minced pork.
  22. Take one ball of dough and press the air out of it.
  23. Shape the dough into a thin round.
  24. Add the minced pork filling.
  25. Shape the bun into a flower shape.
  26. Put each shaped bun on a piece of baking paper cut to size, then put them into the steamer.
  27. Let them proof for 30 to 40 minutes, and do not over proof them because they will taste sour and collapse once taken out of the steamer.
  28. Make sure the steamer is already hot so the buns rise, and do not use high heat because too much steam makes them rise too fast and then collapse.
  29. Once cooked, the buns are ready to serve.
