Steps

  1. Thinly slice 400 g of skinless pork belly.
  2. Move the sliced meat into a bowl.
  3. Chop 1 clove of garlic until really fine so it does not taste bitter when fried, then add it to the meat.
  4. Add 1 cube of red fermented bean curd along with 1 1/2 tbsp of its liquid, and do not add salt because the bean curd is already salty.
  5. Mash the bean curd, then mix it evenly through the meat.
  6. Add 1 tbsp sesame oil, 1 tbsp Shaoxing wine, 1 tsp ground coriander, 1 tsp sugar, 1 tsp mushroom stock powder, and 1/2 tsp ground white pepper, then mix until even.
  7. Add 1/4 tsp baking soda to tenderise the meat along with 1 egg, then mix until everything is combined.
  8. Add 1 tbsp all purpose flour and 1 tbsp cornstarch, then mix until even again.
  9. Cover the bowl and marinate in the fridge for at least one hour.
  10. For the sambal matah, thinly slice 6 shallots.
  11. Slice 5 bird's eye chillies, as many as you like it spicy.
  12. Remove the centre ribs from 3 kaffir lime leaves because they turn bitter, then slice them as thinly as you can.
  13. Thinly slice the white part of 2 lemongrass stalks.
  14. Add 1 1/2 tbsp citrus juice and 1/4 tsp salt.
  15. Mix everything with gloves on while pressing lightly.
  16. Heat 3 tbsp coconut oil together with 1/2 tsp shrimp paste, stir until even, then turn off the heat straight away before the paste burns.
  17. Pour the hot oil into the sambal mixture.
  18. Stir with a spoon while pressing lightly so all the ingredients come together.
  19. Heat a wok and pour in enough vegetable oil for frying, and do not let the oil get too hot or the meat will burn easily.
  20. Add the marinated meat to the wok and fry until it turns lightly golden.
  21. Lift the meat out of the wok.
  22. Rest the meat for 30 minutes and clean the crumbs out of the oil so nothing burns during the second fry.
  23. Reheat the oil over medium to high heat.
  24. Return the meat to the oil and fry it again for just 20 seconds.
  25. Lift it out and drain, then fry the rest of the meat the same way.
  26. Fry an egg sunny side up as an accompaniment.
  27. Serve the pork with the sambal matah, the fried egg, and hot rice.
