  1. Slice 500 g of skinless pork belly the way you like it.
  2. Prepare 3 candlenuts, 3 cloves of garlic, and 6 shallots.
  3. Add 3 tbsp vegetable oil so the spices blend easily, then grind everything into a paste.
  4. Add the spice paste to the meat, then add 1 tsp turmeric powder or 2 segments of fresh turmeric and 2 tsp roasted coriander that has been ground.
  5. Season with 1/2 tsp ground white pepper, 1 tsp mushroom stock powder, and 3/4 tsp salt.
  6. Mix everything until the meat is evenly coated.
  7. Add 1 egg and mix again.
  8. Add 2 tbsp cornstarch so the fried pork comes out crispy, then mix until even.
  9. Marinate the meat for one hour or overnight in the fridge.
  10. For the mango sambal, take 1 young mango of about 400 g and shred it finely.
  11. Grind 5 large red curly chillies and 4 bird's eye chillies, as spicy as you like, then add 1/2 tsp salt.
  12. Add 1/2 tsp roasted shrimp paste and 3 tbsp palm sugar, then grind until combined.
  13. Mix the sambal with the shredded young mango.
  14. Add 2 tbsp lime juice and stir until even.
  15. Heat vegetable oil in a pan, not too much, to fry the pork belly.
  16. Fry the pork belly until golden brown and cooked through to the middle, then serve it with the mango sambal.
