  1. Blend 4 cloves of garlic, 8 cloves of shallot, 1.5 cm of turmeric, 4 red curly chillies, 1 tbsp lime juice, and 3 tbsp water into a paste.
  2. Add 1 tbsp of ground roasted coriander, 1 tsp chicken bouillon, 3/4 tsp salt, and 1/2 tsp white pepper, then mix well.
  3. Rub the paste all over 500 g of pork belly, then keep it in the fridge for 6 hours or overnight.
  4. Put the pork belly into a pan and add a little water.
  5. Smash 2 lemongrass stalks and 2 cm of galangal, tear 3 kaffir lime leaves, then add them all to the pan along with 3 bay leaves.
  6. Add water until it totals 500 ml, cover the pan, and braise over low heat for 30 to 45 minutes.
  7. Fry 5 to 15 bird's eye chillies, 10 large curly chillies, 5 cloves of garlic, 15 cloves of shallot, and 3 tomatoes until cooked.
  8. Pound the fried chillies together with 3/4 tsp salt and 1 tsp chicken bouillon powder.
  9. Add the fried shallots, fried garlic, and 1 tsp of toasted shrimp paste, then pound again.
  10. Add the fried tomatoes, 1 tsp sugar, and 1 tsp lime juice, then pound until evenly mixed.
  11. Squeeze 1/2 a kaffir lime into the sambal for a fresher aroma.
  12. For the basting sauce, mix 1.5 tbsp sweet soy sauce, 1 tbsp margarine, and the leftover braising liquid from the pork belly.
  13. Grill the pork belly while brushing both sides with the basting sauce until cooked through.
  14. Serve the grilled pork belly with tomato sambal, fried tofu, fried tempeh, and cucumber.
