Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Heat water in a pot, then add about 1 kg of pork belly.
  2. Boil until cooked, then lift the pork belly out.
  3. Thinly slice 30 g of ginger.
  4. Cut the boiled pork belly into pieces.
  5. Set aside the pieces with a thick layer of fat because those get fried first to render out the oil.
  6. Heat a wok, then add the fattier pork belly pieces first and fry them until they release their oil.
  7. Add the rest of the sliced pork belly and fry until it releases its oil as well.
  8. Cover the wok so the oil does not spit everywhere.
  9. Once the oil has rendered out, lift the pork belly out and set it aside.
  10. Saute 10 finely chopped cloves of garlic and 15 finely chopped shallots together with the sliced ginger until fragrant.
  11. Once they turn golden, lift them out and set them aside too.
  12. Heat a wok, then add about 1 tbsp vegetable oil.
  13. Add 50 g of rock sugar and cook until it melts and caramelises.
  14. When the sugar turns golden brown it has caramelised.
  15. Add the meat along with the aromatics you sauteed earlier.
  16. Pour in about 3 tbsp Shaoxing wine.
  17. Add 4 tbsp light soy sauce.
  18. Add 2 tbsp sesame oil.
  19. Add 1 tbsp thick dark soy sauce.
  20. Pour in about 800 ml of water.
  21. Add 1 tsp pepper and 1 tsp mushroom stock powder.
  22. Braise for about half an hour until the liquid has reduced.
  23. Turn off the heat, then take it off the stove and serve.
