  1. Prepare 500 g of pork belly, 3 cloves of garlic, and 3 slices of ginger.
  2. Bring a pot of water to a boil, then add the ginger, garlic, and pork belly.
  3. Cover the pot and boil for 30 minutes over low to medium heat.
  4. For the spice paste, roughly slice 4 cloves of garlic, 5 large red curly chillies, and 7 shallots.
  5. Add 1 tbsp vegetable oil so the spices blend easily, then grind everything into a paste.
  6. Dry roast 1 tbsp coriander until fragrant, then grind it.
  7. After 30 minutes, lift the pork belly out of the pot.
  8. Slice the pork belly the way you like it.
  9. Add the spice paste to the bowl holding the sliced pork belly.
  10. Add the juice of 2 calamansi or 15 ml of lime juice.
  11. Pour in 3 tbsp sweet soy sauce.
  12. Add 1 tsp salt, 1 tsp mushroom stock powder, and 1/2 tsp ground white pepper.
  13. Add the ground roasted coriander.
  14. Mix well until every piece of meat is coated in the seasoning.
  15. Marinate for one hour or overnight in the fridge.
  16. Prepare skewers that have been soaked in water so they do not burn easily, then thread on the sliced pork belly.
  17. Heat 1 tbsp margarine until melted, add 2 tbsp sweet soy sauce, then stir to make the basting sauce.
  18. Heat the grill, then grill the satay until cooked.
  19. Brush every side of the satay with the margarine and sweet soy sauce mixture while grilling.
  20. Serve the satay with sweet soy sauce and sliced bird's eye chilli as a dip.
