  1. Bring 1 liter of water to a boil, then add 700 g of pork bones to the pot.
  2. Once it boils, lift out the bones, discard the water, then rinse the bones under running water.
  3. Return the cleaned bones to the pot, then add 3.5 liters of water.
  4. Add 100 g of pork fat for a creamy broth, 1/2 an onion, and the white parts of 2 spring onion stalks.
  5. Cover the pot and cook for 3 to 4 hours over low heat.
  6. Pat 1 kg of pork belly dry, then roll it up like a log and tie it tightly with string.
  7. Bring 1 liter of water to a boil, then add the rolled pork belly to the pot.
  8. Once the water boils, discard it and rinse the pork belly under running water.
  9. Return the pork belly to the pot, then add 1 liter of water.
  10. Add the white parts of 2 spring onion stalks, 8 slices of ginger, and 6 smashed cloves of garlic.
  11. Pour in 200 ml sake, 200 ml mirin, and 250 ml light soy sauce.
  12. Cover the pot and cook over low heat for 1.5 to 2 hours.
  13. For the ajitama eggs, bring water to a boil, lower in 5 eggs with a strainer, and cook for 6 minutes.
  14. Move the eggs into a bowl of ice water, then peel off the shells and set them aside.
  15. Lift out the cooked pork belly and reserve its sauce.
  16. Sear every side of the pork belly until golden brown.
  17. Put the pork belly into a container, then pour the sauce over it.
  18. Add the boiled eggs once the sauce is fully at room temperature, then marinate for 8 to 10 hours or overnight.
  19. If the fat in the broth has not fully melted, put it into a chopper and blend it smooth.
  20. Strain the broth, then stir the blended fat back into the pot of broth.
  21. Season the broth with 1 tsp white pepper, 1.5 to 2 tsp salt, and 1 tsp sugar.
  22. Cut off and discard the string from the marinated pork belly, then slice it.
  23. Pour the broth into a bowl, add 2 tbsp of the pork belly sauce, stir well, then serve with boiled ramen noodles, rolled pork belly, ajitama egg, seaweed, narutomaki, and spring onion.
