Pork Satay with Peanut Sauce

Steps

  1. Dry toast 400 g of peeled peanuts in a pan without oil over low heat until they are properly browned.
  2. Take the peanuts out and set them aside in a bowl to cool before grinding.
  3. Once the peanuts are no longer hot, grind them until really fine.
  4. Blend all the spice ingredients, that is 16 shallots, 10 cloves of garlic, 6 toasted candlenuts, 1 segment of galangal, 2 stalks of lemongrass cut into pieces, 5 red curly chilies and 1/2 tbsp ground coriander, with a little vegetable oil to help.
  5. Pour the spice paste straight into a wok without extra oil, then saute until fragrant and darkened.
  6. Once the paste has darkened, lower the heat then take out 3 tbsp of it for marinating the meat.
  7. Add 5 kaffir lime leaves that have been crushed, then add the finely shaved palm sugar.
  8. Pour in 800 ml water, add 100 ml instant coconut milk and 1.5 tsp salt, then cook while stirring until it boils.
  9. Once it boils add the ground peanuts and stir until evenly combined.
  10. Add 6 tbsp sweet soy sauce, then cook while stirring until it thickens slightly and bubbles.
  11. Once it bubbles turn off the heat and transfer it to a bowl, do not cook it too long since peanut sauce thickens further as it cools.
  12. Pat 1 kg of pork dry with kitchen towel, then cut it into small cubes so it cooks more easily.
  13. Marinate the meat with the juice of one sonkit orange, 1 tsp salt, 1/2 tbsp margarine, 3 tbsp sweet soy sauce and 3 tbsp of the sauteed spice paste, mixing until evenly coated.
  14. Cover with plastic wrap and refrigerate for at least 1 hour, or better still overnight.
  15. Thread the meat onto satay skewers, about 4 to 5 pieces per skewer, then squeeze and press them so the meat is more compact and better shaped.
  16. Prepare the basting mixture by combining 1 tbsp margarine and 4 tbsp sweet soy sauce, stirring until evenly mixed.
  17. Grill the satay on a grill pan or over charcoal, and once half cooked brush it with the basting mixture then grill again until done.
  18. Serve the satay with the thickened peanut sauce, drizzle a little sweet soy sauce over it and sprinkle with fried shallots.
