  1. Boil about 2 litres of water together with 300 g of pork bones for the stock.
  2. Skim off the foam that rises to the surface with a fine mesh strainer.
  3. Keep cooking the stock over low heat while skimming the foam until the broth runs clear.
  4. Cut the white part of 2 stalks of spring onion into pieces, then add them to the stock.
  5. Cook the stock over low heat for about 1 hour without a lid.
  6. Pat the leftover moisture off 4 blocks of white tofu with kitchen paper.
  7. Cut each block of tofu diagonally into two pieces.
  8. Heat a frying pan, add vegetable oil, then add the tofu once the oil is hot.
  9. Fry the tofu until it forms a skin and turns golden.
  10. Let the tofu cool down first.
  11. Slice into the middle of each piece of tofu to form a small pocket.
  12. Cut 500 g of lean pork leg into small pieces.
  13. Put the meat into a chopper or meat grinder, and grind it twice if your grinder is small.
  14. On the second grind, add the rest of the meat along with 1 tbsp fried garlic and 2 tbsp fried shallots.
  15. Add 1 egg white to the mixture, and do not use the yolk.
  16. Add 150 g of shaved ice a little at a time in several stages, not all at once.
  17. Knead the mixture for about 5 minutes.
  18. Add 1 tsp ground white pepper, 2 1/2 tsp salt, 1 tsp mushroom stock powder, 1 1/2 tsp sugar, and 3/4 tsp baking powder.
  19. Knead the mixture again for about 5 minutes until the texture turns thick and dense.
  20. Add 70 g of tapioca starch, then mix until it is evenly combined with the meat.
  21. Bring about 2 litres of water to a boil in a pot, then turn off the heat.
  22. Prepare a bowl of water for dipping the spoon so the mixture does not stick to it.
  23. Take a little of the mixture, roll it into a ball with your hand, scoop it with the spoon, then drop it into the pot of hot water.
  24. Fill the tofu pockets you cut earlier with the rest of the mixture.
  25. Put the stuffed tofu into the pot along with the meatballs.
  26. Turn the heat back on and cook over low heat.
  27. Cover the pot and cook until done and the meatballs float to the surface.
  28. Prepare a bowl of iced water, then lift out the cooked meatballs and drop them into it.
  29. Let them cool, then dry them and keep them in the fridge if you are not using them yet.
  30. Strain the stock, then pour the meatball cooking water into the stock pot.
  31. Season the broth with salt, sugar, pepper, and mushroom stock powder to suit the amount of water.
  32. Add as many meatballs as you want to serve.
  33. Serve topped with fried shallots, sliced spring onion, sliced celery leaves, and fried garlic.
