  1. Put 500 g of skinless boneless chicken breast fillet into a meat grinder or chopper.
  2. Add 1 cold egg white so the protein binds and the meatballs turn out springy.
  3. Add 150 g of shaved or crushed ice so the mixture stays cold.
  4. Add 2.5 tsp salt, 3/4 tsp baking powder, 1.5 tsp sugar, 1/2 tsp white pepper, 2 tbsp fried shallots, and 1/2 tbsp fried garlic.
  5. Grind the mixture until it is really smooth, firm, and springy.
  6. Add 100 g of tapioca starch, then grind again until it is evenly combined with the mixture.
  7. Prepare a large bowl of crushed ice and water so it is truly cold.
  8. Shape the mixture into balls with your hand, scoop them with a spoon, then drop them into the bowl of cold water.
  9. Prepare a pot of boiling water and a bowl of ice water.
  10. Add the meatballs to the boiling water and boil for 10 to 15 minutes until cooked, being careful not to overcook them.
  11. Lift out the meatballs and immediately put them into the bowl of ice water to stop the cooking process.
  12. Drain the meatballs and keep them in the chiller for up to 3 days, or in the freezer if you want to keep them longer.
  13. To serve, strain the cooking water, bring it back to a boil, then season with salt, pepper, mushroom bouillon, and a little sugar.
  14. Add a few meatballs, bring back to a boil, and turn off the heat.
  15. Ladle the broth and meatballs over lettuce leaves, then add sliced spring onion and fried garlic.
