  1. Slice 1 stalk of spring onion and chop 3 cloves of garlic.
  2. Pat 100 g of peeled shrimp and 400 g of pork shoulder dry with kitchen paper so the wonton wrappers do not turn soggy.
  3. Roughly chop the shrimp, then slice and finely chop the pork.
  4. Add the chopped shrimp, chopped garlic, and spring onion into the bowl with the meat.
  5. Add 1.5 tbsp sesame oil, 1.5 tbsp oyster sauce, 1 tbsp tapioca starch, and 1 egg.
  6. Season with 1 tsp sugar, 1/2 tsp pepper, 1 tsp salt, and 1 tsp mushroom bouillon, then mix until everything is combined.
  7. Set the filling aside for about 30 minutes so the seasoning soaks in.
  8. For the sauce, mix 6 tbsp mayonnaise, 1/2 tbsp tomato sauce, 2 tsp lemon juice, 2 tbsp condensed milk, a pinch of pepper, and a pinch of salt, then keep it in the fridge.
  9. Prepare 40 to 45 wonton wrappers and a small bowl of water.
  10. Put the filling in the centre of a wrapper, wet each side of the wrapper, then fold it into a triangle.
  11. Press the middle down, wet one corner, then seal and press it so it does not open while frying.
  12. Heat a frying pan with a generous amount of vegetable oil.
  13. Fry the wontons until cooked, crisp, and golden brown, then serve with the sauce.
