Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Slice 500 g of pork into long thin strips so it cooks faster.
  2. Prepare 100 ml vegetable oil, 2 tbsp margarine, 8 shallots, 2 candlenuts, and 6 cloves of garlic.
  3. Prepare 1 1/2 tbsp key lime juice, 8 tbsp sweet soy sauce, and 2 tbsp light soy sauce.
  4. Grate 5 cm of galangal on a coarse grater, then fry it and drain it.
  5. Prepare 1 1/2 tbsp ground coriander and 1 tbsp pepper.
  6. Blend the shallots, garlic, and candlenuts together with the 100 ml of vegetable oil so they grind easily.
  7. Add the spice paste to the meat.
  8. Add all the other ingredients to the meat.
  9. Adjust the sweetness to your taste, and use less sweet soy sauce if you do not like it too sweet.
  10. Do not add salt because the margarine and the light soy sauce are already salty.
  11. Mix well until all the seasoning is worked into the meat.
  12. Cover the bowl, then keep it in the fridge for at least three hours or overnight.
  13. Thread the meat onto skewers, folding each slice, using about 4 to 5 slices per skewer.
  14. For the basting sauce, mix 1 to 2 tbsp margarine with 5 tbsp sweet soy sauce.
  15. Heat the grill, then brush its surface with margarine or oil.
  16. Grill the satay while turning it constantly.
  17. After grilling for a while, brush the satay with the margarine and sweet soy sauce mixture.
  18. Keep turning the satay because sweet soy sauce burns very easily, and the colour will darken with a caramel flavour.
  19. Once the meat is cooked, take the satay off the grill and serve.
