  1. Soak 150 g of prawns in 1 cup of cold water with 1 tsp salt and 1/2 tsp baking soda so the flesh stays springy, then marinate for 15 minutes.
  2. Drain the prawns, then rinse them with water again.
  3. Dry the prawns with kitchen paper, and do not skip this step because wet prawns make the siu mai wrappers damp and the shape will not hold.
  4. Chop the prawns.
  5. Prepare 250 g of ground pork shoulder at room temperature, then dry off its moisture with kitchen paper as well.
  6. Drain 5 dried shiitake mushrooms that have been soaked.
  7. Chop the mushrooms.
  8. Move the chopped prawns into the bowl holding the ground pork.
  9. Mix with your hands until the two meats come together.
  10. Add the chopped shiitake, then mix until even again.
  11. Slap the mixture against the bowl so the texture turns springy once cooked.
  12. Add 1 tbsp light soy sauce, 1 tbsp oyster sauce, and 1 tbsp sesame oil.
  13. Add 1 tbsp sugar, 1/2 tsp mushroom stock powder, 1/2 tsp salt, and 1/2 tsp ground white pepper.
  14. Add 2 tbsp water and 2 tbsp cornstarch, then mix until even.
  15. Add 1/2 tsp baking soda so the meat is springy but still tender, then mix again.
  16. Marinate the mixture for 30 minutes in the fridge.
  17. Prepare round dumpling wrappers and chopped carrot for the wrapping.
  18. Take a wrapper, fill it with the mixture, then shape the siu mai.
  19. Put a little chopped carrot on top of each siu mai.
  20. Set up a steamer with boiling water, then steam the siu mai for 10 minutes.
  21. Lift out the cooked siu mai and serve them with chilli oil dipping sauce.
