  1. Peel 500 to 600 g of taro, wash it clean, then cut it into matchsticks.
  2. Put 75 g of soaked dried shiitake mushrooms, 10 cloves of garlic, and 2 stalks of spring onion into a chopper, then chop coarsely.
  3. Roughly chop 200 g of peeled shrimp so it keeps some texture.
  4. Combine the taro, mushrooms, shrimp, and 750 g of ground fatty pork.
  5. Add 2 eggs, 2 tbsp oyster sauce, 3 tbsp sesame oil, and 3 tbsp cooking rice wine.
  6. Season with 1.5 tsp salt, 2 tbsp sugar, 1 tsp white pepper, and 1 tsp five spice powder, then mix until everything is combined.
  7. Add 100 g of tapioca starch and 4 tbsp of cornstarch, then mix until even and slightly firm.
  8. Cut 2 large beancurd sheets into six pieces each so you get about 8 pieces.
  9. Beat 1 egg and divide the filling into about 8 portions.
  10. Place one portion on a beancurd sheet, brush every side with beaten egg, then roll it up tightly.
  11. Wrap the outside in plastic and twist the ends so the filling is really compact and does not tear.
  12. Arrange the rolls in a steamer lined with paper so they do not stick.
  13. Steam for about 30 minutes over low heat so they keep their round shape.
  14. Take them out of the steamer and let them cool completely before slicing.
  15. Heat a generous amount of oil for frying, then cut the rolls about 1 cm thick.
  16. Fry until golden and crispy on the outside, then lift them out.
  17. Serve with a chilli dipping sauce.
