  1. Prepare 600 g of prawns, then push a toothpick into the back of each one and pull out the dark vein.
  2. Prepare about 100 g of jicama, then cut it into small pieces.
  3. Prepare 1 small carrot of about 50 g, then cut it into small pieces.
  4. Slice 1 stalk of spring onion.
  5. Cut half of the prawns into small pieces so the filling keeps some texture.
  6. Prepare 300 g of pork shoulder.
  7. Put the meat into a grinder together with 4 cloves of garlic and the remaining half of the prawns, then grind until smooth.
  8. Add 2 eggs.
  9. Add 2 tbsp sesame oil.
  10. Add 2 tbsp oyster sauce.
  11. Add 1 tbsp light soy sauce.
  12. Add 1/2 tsp five spice powder, 1/2 tsp salt, and 2 tsp sugar.
  13. Add 1/2 tsp ground white pepper and 2 tsp mushroom stock powder, then mix until everything is combined.
  14. Add the roughly chopped prawns.
  15. Add the carrot, jicama, and spring onion you cut earlier.
  16. Add 6 tbsp cornstarch, then mix until even.
  17. Prepare one large sheet of beancurd skin, then cut it into several pieces.
  18. If the beancurd skin is salty, wipe the salt off with a clean cloth, then put a few spoonfuls of the meat mixture on the lower part of the skin.
  19. Fold the bottom edge over, then both sides, and roll it up.
  20. Brush the end with beaten egg or a mixture of water and cornstarch so it seals.
  21. Brush the rolls with vegetable oil so they do not stick together after steaming.
  22. Do the same with the rest of the mixture until it is all used up.
  23. Steam the rolls for 15 minutes until cooked.
  24. Let them cool, and these rolls keep in the fridge or freezer for up to 1 month.
  25. Heat a generous amount of frying oil.
  26. Fry the rolls until golden and the skin is crispy.
  27. Serve them with sambal for dipping.
