Ingredients

Garlic butter sauce:

Mayonnaise:

Steps

  1. Chop 350 g of cleaned fresh prawns until fine but still with some texture left.
  2. Transfer the chopped prawns to a bowl and add 2 grated garlic cloves.
  3. Season with 1 tsp oyster sauce, 1 tsp sesame oil, 3/4 tsp salt, 1/8 tsp pepper, 1/4 tsp stock powder, 1 1/2 tbsp tapioca starch and 1 egg white.
  4. Mix until it becomes one smooth, evenly combined paste.
  5. Transfer the mixture into a piping bag.
  6. Pipe the mixture into a silicone mould until full, then press and level it so there are no air pockets.
  7. Freeze until half frozen, just firm enough to come out of the mould.
  8. Coat in medium-protein flour.
  9. Dip in beaten egg so every part is covered.
  10. Roll in panko until the whole surface is coated.
  11. Leave at room temperature for about 10 minutes before frying.
  12. Fry over medium heat, turning, until golden brown, then lift out and drain.
  13. For the sauce, melt 45 g unsalted butter.
  14. Add 4 tbsp Bangkok chilli sauce, 3 tbsp chilli sauce, 1 tbsp fried garlic, 1 tsp garlic powder, 1 1/2 tsp honey and 1 1/2 tsp chilli powder.
  15. Add 150 g water, bring to the boil, then lower the heat and cook until the sauce thickens, turn off the heat and let it cool.
  16. For the mayo sauce, mix 150 g mayonnaise with 3 to 4 tbsp chilli sauce until combined.
  17. Serve the prawn doughnuts scattered with spring onion alongside both sauces.
