  1. Cut 100 g of mozzarella cheese into small cubes.
  2. Remove the stems from 5 soaked dried shiitake mushrooms and cut them into pieces.
  3. Thinly slice 3 stalks of scallion and cut 100 g of pork sausage into small pieces.
  4. Coarsely chop 300 g of peeled shrimp.
  5. Grind 300 g of skinless pork belly together with 4 cloves of garlic in a meat chopper.
  6. Heat a wok with 2 tbsp of vegetable oil and fry the mushrooms until lightly browned.
  7. Add the sausage and stir-fry only briefly, then turn off the heat.
  8. Put the chopped shrimp and the ground pork into a bowl, season with 1 tbsp oyster sauce, 1 tbsp sesame oil, half a teaspoon of sugar, half a teaspoon of salt, 1 tsp mushroom bouillon and half a teaspoon of white pepper, then mix until even.
  9. Fold in the fried mushrooms and sausage together with the sliced scallions.
  10. Add 1 tbsp of cornstarch and mix again until everything binds.
  11. Cut the beancurd skin into 24 sheets of about 10 by 12 cm.
  12. Boil 500 ml of water and blanch the pandan leaves briefly so they will not snap when torn into ties.
  13. Put about half a spoonful of filling on a beancurd sheet, add a piece of mozzarella, then cover with another half spoonful of filling.
  14. Wrap the beancurd skin around the filling and tie it with a strip of pandan leaf.
  15. Steam for about 10 to 15 minutes.
  16. Heat plenty of oil and deep fry until golden.
  17. Serve hot so the cheese is still melting.
