  1. Cut the bitter gourd into pieces, remove the center, then soak in salted water to reduce the bitterness.
  2. Grate the pumpkin squash with a cheese grater, squeeze it, and discard the liquid.
  3. Mix the squash with the boneless chicken thighs, sugar, salt, and ice cubes, then blend in a chopper until smooth.
  4. Transfer to a large bowl, then add garlic powder, sesame oil, oyster sauce, pepper, soy sauce, flavor enhancer, and the scallion.
  5. Add tapioca starch, wheat flour, and the egg white, then mix until evenly combined.
  6. Grease the steamer with cooking oil so the mixture does not stick.
  7. Place some of the mixture in the steamer, then press it with a fork to give it ridges.
  8. Stuff the mixture into the bitter gourd, the tofu puffs, and the boiled cabbage leaves, then roll up the cabbage.
  9. Steam for about 15 to 20 minutes.
  10. Fry the assorted onions, bird's eye chilies, curly red chilies, peanuts, and kaffir lime leaves until wilted, then drain.
  11. Blend with a little water using a chopper.
  12. Saute the peanut paste until really fragrant and it changes color.
  13. Add water, palm sugar, soy sauce, sugar, and salt, then cook until done and the oil rises.
  14. Pour the peanut sauce over the siomay, then add the boiled eggs and potatoes and a squeeze of key lime.
