Blend all the ingredients above, cook until boiling, lower the heat and let it cook for another 5 minutes, then add :

Steps

  1. Prepare the filling ingredients: 700 gr coarsely grated jicama, 70 gr coarsely grated carrot, 3 cloves of finely chopped garlic, 2 shiitake mushrooms soaked until soft and cut small, 2 tbsp finely chopped dried shrimp, 2 tsp salt, 2 tbsp granulated sugar, 1/2 tsp mushroom bouillon, 1/2 tsp pepper, 1 tbsp salty soy sauce, plus 3 stalks of celery and 1 stalk of spring onion thinly sliced.
  2. Heat enough cooking oil in a wok, add the garlic, fry until golden, then turn off the heat, lift it out, and set it aside.
  3. In the same wok heat a little more oil, saute the shiitake mushrooms until browned, then lift them out and set them aside with the fried garlic.
  4. Still in the same wok, heat enough cooking oil again, add the dried shrimp, then saute until fragrant.
  5. Once the dried shrimp is fragrant, add the grated jicama and grated carrot.
  6. Stir briefly, then add the pepper, mushroom bouillon, salt, and granulated sugar.
  7. Add a little salty soy sauce to give a darker color, then stir until evenly combined.
  8. Once the filling has wilted enough, add the shiitake mushrooms and garlic you set aside, then stir until evenly combined.
  9. Before taking it off the heat, add the spring onion and celery, stir briefly until evenly combined, then lift it out, drain it, and let the filling cool first.
  10. For the crust, set out a fairly large bowl, add 300 gr low-protein flour, 1/4 tsp salt, and 1/2 tsp chicken bouillon powder, then stir until evenly combined.
  11. Add 40 gr vegetable oil and 30 gr melted margarine, then stir briefly.
  12. Pour in 80 ml warm water, then mix by hand until evenly combined. This dough does not need kneading; just gather it together so the result is not tough.
  13. Wrap the dough in plastic and rest it for 30 minutes so it becomes more pliable, then unwrap it and divide the dough into 4 parts.
  14. Round each portion, then cover with plastic or a cloth so the dough does not dry out while it waits its turn.
  15. Take one portion and roll it out thin, then cut it out with a ring cutter 8 cm in diameter.
  16. Put filling on one round of dough, cover it with another round while pressing the edges together, then thin out the edge.
  17. Once the edge is thin enough, crimp it by pinching, folding it inward, and pressing it down.
  18. Once all the pastels are formed, fry them in hot oil over medium heat, stirring and turning them so they cook evenly.
  19. Once the edges are browned, lift them out and drain them right away, then serve them with the chili sauce.
  20. For the chili sauce, blend 25 gr bird's eye chilies, 3 cloves of garlic, 100 ml water, 2 tbsp granulated sugar, 1/2 tsp salt, and 1/2 tbsp bottled chili sauce, cook until boiling, lower the heat and cook for another 5 minutes, then add 1 tbsp cooking vinegar, stir well, and turn off the heat.
