Steps

  1. Mix 40 gr of margarine with 40 ml of cooking oil, then melt it by setting the bowl over a pot of hot water.
  2. Prepare a bowl and add 500 gr of wheat flour, 1/2 tsp of salt, and 25 gr of margarine.
  3. Add the melted margarine and oil mixture while it is still hot.
  4. Add 200 ml of warm water then stir until evenly combined.
  5. Knead the dough by hand until it is smooth, no longer sticky on your hands, and not dry.
  6. Roll the dough into a ball, cover it with plastic wrap or a clean cloth, then rest it for about 30 minutes so it relaxes.
  7. For the filling, heat a little oil in a wok over medium heat.
  8. Add 10 shallots and 8 cloves of garlic that have been grated, then cook until fragrant, stirring occasionally.
  9. Add 600 gr of potato and 300 gr of carrot cut into small dice, then stir until evenly combined.
  10. Add 1 tsp of ground pepper, 1 tsp of powdered broth, 1 tsp of salt, and 200 ml of water, then stir until evenly combined.
  11. Cover the wok and cook until the liquid has reduced and the carrot is tender, stirring occasionally so the bottom does not scorch.
  12. Once the liquid has reduced, taste and add more salt if it is not savoury enough.
  13. Add 2 stalks of spring onion and 2 stalks of celery leaf, both finely sliced, then stir briefly until evenly combined.
  14. Turn off the heat and let the filling cool.
  15. After the 30 minute rest, uncover the dough and knead it briefly.
  16. Divide the dough into small portions of about 30 gr each, and keep the waiting portions covered with a clean cloth or plastic so they stay moist.
  17. Take one portion and roll it out thin to a medium thickness, neither too thin nor too thick.
  18. Flip the dough so the rolled surface becomes the outer skin, then add about 1 tbsp of filling.
  19. Bring the two sides of the dough together, then press and seal them.
  20. Pinch the edge until it is thin and neat.
  21. Shape the rim by pinching and folding it inward, then repeat until all the dough has been filled.
  22. If you want to freeze them, arrange the pastel on a tray lined with plastic and put it into the freezer.
  23. Once the pastel are half frozen, turn them over, then keep freezing until they are fully frozen.
  24. Once frozen, pack the pastel into a box or bag with plastic between each layer so they do not stick together, then store in the freezer for up to 1 month.
  25. Rest the pastel at room temperature for about 30 minutes before frying.
  26. Heat enough oil in a wok until it is really hot, then add a batch of pastel so they come out with a blistered surface.
  27. Fry until the pastel are cooked and golden brown over medium heat, turning them so they cook evenly.
  28. Once they are golden, lift the pastel out of the oil and drain them on oil-absorbing paper.
