Steps

  1. Turn on medium heat and pour a little cooking oil into a pan.
  2. Once the oil is hot, add 10 grated shallots and 8 grated cloves of garlic, then fry until fragrant.
  3. Add 250 g chicken meat cut into small pieces and stir-fry until the meat changes colour.
  4. Add 300 g carrot and 600 g potatoes, both cut into small cubes, then stir until evenly combined.
  5. Add 1 tsp ground pepper, a quarter teaspoon of ground nutmeg, 1 tsp salt, 1 tsp powdered stock and 200 ml water, then stir until evenly combined.
  6. Cover the pan and cook until the liquid has reduced and the carrot is tender, stirring occasionally.
  7. Taste and adjust, then add 2 stalks of celery and 2 stalks of spring onion, both finely sliced.
  8. Add 200 g rice vermicelli that has been soaked until soft and drained, then cook briefly, stirring until evenly combined.
  9. Turn off the heat and leave the filling until it is cold.
  10. Heat water in a pan, set a bowl holding 40 g margarine and 40 ml cooking oil over it, heat until the margarine melts, then turn off the heat.
  11. Prepare a bowl and add 500 g low-protein wheat flour, 25 g margarine and a quarter teaspoon of salt.
  12. Add the melted margarine mixture while it is still hot along with 200 ml warm water, then stir until evenly combined.
  13. Knead the dough by hand until smooth, then keep kneading for about 3 minutes.
  14. Shape the dough into a ball, return it to the bowl, cover with cling film, then rest it for about 30 minutes so it relaxes.
  15. After about 30 minutes, uncover the dough and knead it again for about 1 minute.
  16. Divide the dough into 40 equal pieces of about 20 g each, keeping the waiting pieces covered with plastic or a clean cloth.
  17. Roll two pieces into balls, then roll them out with a rolling pin to a medium thickness, not too thin so they do not burst while frying.
  18. Put about one heaped tablespoon of filling in the centre of one round and tidy it up.
  19. Cover it with the second round, join the two edges together, then press and seal the rim.
  20. Pinch and press the rim until thin, then fold it inwards to form the pastel shape, and repeat until finished.
  21. Heat oil in a pan over medium heat until it is really hot, then add as many pastries as fit.
  22. Fry over medium-low heat, turning them, until the pastries are golden and cooked through.
  23. Once they are golden, lift the pastries out and drain them.
  24. To keep a stock, freeze the pastries layered with plastic in an airtight container, and let them stand for about 30 minutes before frying.
