Lapis Surabaya Layer Cake, a Thriftier Egg Version

Steps

  1. Combine 80 g cake flour and 10 g cornstarch, then sift.
  2. Prepare a mixing bowl, crack in 2 whole eggs, then add 14 egg yolks.
  3. Add 150 g sugar and beat at high speed until the batter is fluffy and thick enough to leave a trail.
  4. Meanwhile melt 160 g butter over a pan of hot water, stirring until fully melted.
  5. Once the batter leaves a trail, lower to the slowest speed and add the flour mixture in stages, mixing briefly until the flour is evenly incorporated.
  6. Stir 1 tbsp condensed milk and 1 tsp vanilla extract into the melted butter until combined.
  7. Take a little batter and stir it into the butter mixture using the tempering technique.
  8. Pour the butter mixture into the main batter and fold until evenly combined; the batter should stay thick.
  9. Divide the batter evenly between 2 pans measuring 20x20 cm and 4 cm deep.
  10. Tap the pans a few times to knock out the air bubbles in the batter.
  11. Bake at 170 degrees Celsius with top and bottom heat for 20 minutes or until done, and remember to preheat the oven 10 minutes beforehand.
  12. Once baked, turn the cakes out of the pans and let them cool first.
  13. For the chocolate layer, beat 7 egg yolks and 1 whole egg with 75 g sugar until fluffy and thick enough to leave a trail.
  14. Lower to slow speed and add the sifted mixture of 30 g flour, 5 g cornstarch and 10 g cocoa powder in stages while mixing, being careful not to overmix.
  15. Stir 1/2 tsp blackforest paste and 1/2 tbsp condensed milk into 80 g melted butter until combined.
  16. Take a little batter, stir it into the butter mixture, then pour it into the main batter and fold until fully combined with no butter settling at the bottom.
  17. Pour the chocolate batter into the pan then bake at 170 degrees Celsius with top and bottom heat for 20 minutes or until done.
  18. Take one yellow layer, spread it thinly with blueberry jam, then stack the chocolate layer on top and press down.
  19. Spread more jam on top, stack the second yellow layer on, then press so every layer sticks together perfectly.
  20. Trim the sides of the cake so it looks neater before serving.
